This one’s different from my usual post but this was truly one of the most delicious dinners I’ve had in a long time and I had to share the recipe!
Tofu & Edamame Stir Fry
-Container of cubed tofu
-About 10 stalks of asparagus
-5-6 baby zucchini
-1 cup of edamame
-5-6 Falafal balls, cut in half
In a frying pan, add two turns of evoo. Fry the tofu on medium-high heat for 5-10 minutes, stirring it regularly and cooking it until it browns and starts to crisp. Cut up the asparagus and zucchini into chunks. Add asparagus, zucchini, edamame & falafal halfs and fry for another 5 minutes or so or until the vegetables are cooked.
Serve and enjoy! Seriously, this was amazing. I think it’s the combo of the tofu and edamame especially that really makes it taste so hearty.
